Ingredients

  • 1 cup old-fashioned oats
  • 1 cup milk, any kind
  • 2 shots brewed espresso or coffee (roughly ¼ cup)
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons honey or pure maple syrup, to sweeten (if desired)
  • 1 teaspoon vanilla bean paste (or vanilla extract)

Mascarpone Yogurt Layer

  • ½ cup vanilla Greek yogurt
  • 2 tablespoons mascarpone cheese
  • 1 tablespoon honey or pure maple syrup, to sweeten (if desired)
  • Unsweetened cocoa powder, for dusting

Instructions

  • In a medium airtight container or bowl, add oats, milk, espresso, unsweetened cocoa powder, honey/maple syrup, and vanilla. Stir or seal lid and shake well to make sure everything is combined.
  • Pour into two mason jars (if desired) or keep in container or bowl and cover (this recipe makes 2 servings). Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid. Stir well before making the mascarpone layer.
  • Before serving, make the mascarpone yogurt layer: in a small bowl, whisk yogurt, mascarpone, and honey/maple syrup until combined and smooth. Add a touch of milk to thin the mixture, if needed. Spoon mascarpone mixture over oats and top with cocoa powder, if desired. Serve immediately.

  • Oats will last in the refrigerator for up to four days.
