In a medium airtight container or bowl, add oats, milk, espresso, unsweetened cocoa powder, honey/maple syrup, and vanilla. Stir or seal lid and shake well to make sure everything is combined.
Pour into two mason jars (if desired) or keep in container or bowl and cover (this recipe makes 2 servings). Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid. Stir well before making the mascarpone layer.
Before serving, make the mascarpone yogurt layer: in a small bowl, whisk yogurt, mascarpone, and honey/maple syrup until combined and smooth. Add a touch of milk to thin the mixture, if needed. Spoon mascarpone mixture over oats and top with cocoa powder, if desired. Serve immediately.
Notes
Oats will last in the refrigerator for up to four days.
