2 large eggs Salt and pepper to taste ¼ cup crumbled feta cheese divided 1 tablespoon olive oil 2 cups fresh baby spinach 4 slices bacon cooked and drained 2 bagel thins or regular bagels sliced and toasted

Preheat oven to 375F. Lightly grease 2 mini pie pan wells or 2 jumbo muffin wells with non-stick cooking spray.
Crack one egg into each well. Sprinkle with salt and pepper. Lightly whisk to combine. Sprinkle feta cheese on top of egg mixture.
Bake for 8-10 minutes, or until eggs are set. Remove from oven and let cool slightly.
While eggs are baking, heat olive oil in a medium skillet. Add spinach and sauté until wilted. Remove from heat and set aside.
To assemble breakfast sandwiches, divide spinach evenly between two bagels. Top each bagel with the baked eggs, and two slices of bacon.
Serve immediately, refrigerate, or freeze until ready to serve.
