2 tablespoons unsalted butter ¼ cup diced green pepper about 1/2 of a large green pepper ¼ small red onion diced ¼ cup fresh or frozen corn 1 roma tomato diced Salt and pepper to taste 8 eggs beaten ½ cup shredded cheddar jack cheese 4 tostada shells warmed Salsa, sour cream, cilantro for topping, if desired

In a large skillet, melt butter over medium heat.
Add green peppers and onions. Saute for about 2-3 minutes, or until tender.
Add corn, diced tomato, salt, and pepper. Stir to combine. Add eggs and cheese to skillet. Stir until eggs are scrambled and no liquid remains.
Serve eggs over tostada shells. Top with additional cheese, salsa, and/or sour cream, if desired.
