These Pumpkin Pie Bites are a healthy, no bake version of the classic dessert, but made easy without all of the prep work. Filled with ground oats, pumpkin puree, peanut butter, and spices, these pumpkin energy balls are the perfect treat for fall!

Ingredients

  • ¼ cup pure pumpkin
  • ¼ cup honey
  • ½ cup Jif Whipped Pumpkin Spice Peanut Butter (or regular peanut butter, slightly melted - see note below)
  • ¾ cups old-fashioned oats (ground in food processor or blender)
  • 1 tablespoon chia seeds
  • ½ teaspoon ground cinnamon
  • 2 teaspoons pumpkin pie spice

Instructions

  • In a large bowl, combine the pumpkin, honey, and peanut butter. Add in ground oats, chia seeds, cinnamon, and pumpkin pie spice. Stir well.
  • Using a small spoon or scoop, roll into balls. Refrigerate for at least 15-30 minutes, or until ready to serve. Store in the refrigerator.

Notes

  • If you used the Jif Whipped Peanut Butter, there is no need to melt it first, as it's light and relatively thin by itself. If you use regular creamy peanut butter, than you will need to melt it slightly, about 5-10 seconds in the microwave so that it's easy to mix.
  • Pumpkin Pie Bites will keep covered in the refrigerator for up to 2 weeks.
