Set Instant Pot to 'sauté' setting. Once pot is hot, add olive oil. If needed, cut steak into pieces to fit into the bottom of the pot and then season beef with salt, pepper, garlic powder, and paprika. Add to Instant Pot and sear for 1-2 minutes on each side. Press the 'cancel' button once beef is browned. (See note below)
Sprinkle onion gravy mix evenly over steaks and then add beef broth and cream of mushrooms soups. Stir gently to combine.
Cover, place the lid into the lock position and make sure the valve is in the 'sealing' position. Press the 'manual' button and set the timer for 20 minutes on high pressure. **Remember that it will take the IP about 10-15 minutes to come to pressure and then will count down from 20 minutes**
When the timer goes off, let the pot do a natural release for 15 minutes. Then, do a quick release by turning the valve to the venting position and letting steam release until the pin drops. (I like to place a folded kitchen towel over the valve so that it catches the steam)
Remove steaks and serve with gravy over mashed potatoes, noodles, or rice, if desired.
Notes
Leftovers will keep in an airtight container in the refrigerator for up to three days.
While you don't have to season and sear the round steak before cooking as listed in step #1, I find it gives this cut of beef more flavor, as without, it is more bland.
