Easy Brown Sugar Cookies are soft, chewy, and simple to make. Made with just a few ingredients, these cookies are filled with a buttery, caramel flavor and are so delicious!

Instructions
In a medium bowl, combine flour, cornstarch, baking soda, baking powder, and salt. Set aside.
In a large bowl, cream butter and brown sugar with a hand mixer or stand mixer with a fitted paddle attachment until light and fluffy, about 2-3 minutes. Add eggs and vanilla and mix.
Gradually add flour mixture to butter mixture, beating until just combined. Cover and refrigerate dough for at least two hours, or overnight.
When ready to bake, preheat oven to 350°F. Line two large baking pans with parchment paper or lightly grease with cooking spray.
In a small bowl, add remaining ½ cup granulated sugar. Scoop dough by the tablespoonful and then roll in sugar.
Place onto prepared pans and bake for 10-12 minutes, or until edges are lightly browned. Let cool on pan for 10 minutes, then remove from pan and let cool completely on wire racks.
Notes
Brown sugar cookies will keep in an airtight container at room temperature for up to three days.
