Cherry Chocolate Chunk Baked Oatmeal is a simple, one bowl recipe that's loaded with flavor. Filled with healthier ingredients, this make-ahead breakfast is perfect for everyone!
1½cupsfrozen cherries, halved(I used frozen dark sweet cherries)
1cupdark chocolate chunks(or chocolate chips)

Preheat oven to 350°F. Lightly spray an 8x8 baking dish with cooking spray. Set aside.
In a large mixing bowl, whisk the milk, eggs, honey, and vanilla until smooth. Add in the oats, cinnamon, nutmeg, baking powder, baking soda, and salt and stir well until fully combined. Fold in cherries and chocolate chunks.
Spread mixture into prepared baking dish. Bake for 38-45 minutes, or until oatmeal is firm. Remove from oven and let cool for 10 minutes. Serve with a drizzle of honey or maple syrup, if desired.
Notes
Baked oatmeal will keep refrigerated in an airtight container for up to five days.
If frozen, oatmeal will keep in a freezer-safe container for up to three months.
