Preheat oven to 375F. Line a small baking pan with parchment paper.
Cut the top of the rind off brie and plate onto prepared pan. Bake for 8-12 minutes, or until cheese is warm and starts to melt, but is not oozing out. It's important to watch this because if the cheese melts too much, it will become a big blog when transferring to a serving dish.
While brie is baking, in a small skillet, melt butter over medium heat. Add chopped apples and brown sugar. Mix and saute until apples are tender, about 6-7 minutes. Drizzle caramel sauce over apple mixture and stir to combine. Remove from heat.
Once brie is ready, slide it from the pan to a serving platter or board. The parchment paper will help the brie slide out easily.
Spoon apple mixture over the top of brie, and garnish with extra caramel sauce.
Serve immediately with apple slices, pita chips, graham crackers, or pretzels.
