Cake Mix Chocolate Chip Cookie Bars

These Cake Mix Chocolate Chip Cookie Bars are simple to prepare and made with just five ingredients. By using a boxed cake mix, these bars bake up soft, chewy, and are loaded with chocolate!

Ingredients

  • 1 (15.25 ounce) box yellow cake mix
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • ¾ cup chocolate chips

Instructions

  • Preheat oven to 350℉. Grease a 9x13 baking pan with cooking spray and set aside. Alternatively, you can use an 8x8 pan for thicker bars.
  • In a large mixing bowl, add cake mix, melted butter, eggs, and vanilla. Stir well to combine and then fold in chocolate chips. Batter will be thick!
  • Spread batter evenly into prepared pan using a spatula. Bake for 18-22 minutes (for a 9x13 pan) or 20-25 minutes (for an 8x8 pan), or until top of cake is slightly browned and toothpick inserted into center comes out mostly clean. Let cool completely before slicing into bars.

Notes

  • Leftover bars will keep in an airtight container at room temperature for up to five  days.
