Easy Banana Cobbler is filled with the flavors of banana bread, but in cobbler form. Simple to make and loaded with flavor, this banana dessert is perfect when served warm with a scoop of vanilla ice cream!

Preheat oven to 375°F. Lightly grease a 9x13 baking pan with cooking spray. Set aside.
In a large bowl, stir together cake mix, milk, and melted butter until combined. Stir in butterscotch chips. Spread into prepared pan. Top evenly with banana slices (slices will overlap). Set aside.
In a small bowl, whisk together ½ cup brown sugar, ½ cup warm water, and cinnamon. Slowly pour all over bananas.
In a medium bowl, stir together oats, flour, baking powder, walnuts (if using), softened butter, and remaining ¾ cup brown sugar with a fork until combined and crumbly. Sprinkle mixture onto bananas.
Bake until golden brown and bubbly, about 40-45 minutes. Remove from oven and let cool for 20 minutes. Serve with vanilla ice cream and more banana slices, if desired.
