This Arugula and Prosciutto Puff Pastry Pizza is easy to make and ready in about 20 minutes. Puff pastry dough is drizzled with olive oil, and then topped with mozzarella cheese, fresh arugula, salty prosciutto and some shaved Parmesan cheese. Simple, fresh, and bursting with flavor, this lighter pizza is perfect for busy weeknights and is sure to be a mealtime winner!
1sheet frozen puff pastrythawed (from a 17.3 ounce package)
2tablespoonsolive oil
½cupshredded mozzarella cheesedivided
½cupfresh aruguladivided
4slicesprosciuttochopped
¼cupshaved Parmesan cheese

Instructions
Preheat oven to 425F. Line a large baking pan with parchment paper or grease with non-stick cooking spray. Set aside.
Unroll puff pastry dough and use a rolling pin to spread out lightly. Cut the dough in half and fold edges over to create a crust. Place onto prepared baking pan.
Drizzle each half with 1 tablespoon of olive oil and then lightly prick dough with a fork. Bake for 5-7 minutes.
Remove pan from oven and top each half with 1/4 cup mozzarella cheese. Continue to bake for 7-10 minutes, or until crust is golden.
Remove, and if needed, lightly prick air bubble on crust to deflate. Top each half with arugula, prosciutto, and shaved Parmesan cheese.
