Ingredients

  • 6 slices bacon
  • 4 slices sourdough bread
  • 2 tablespoons honey
  • 1 small apple, thinly sliced (such as Fuji or Granny Smith)
  • cup shredded sharp cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • 4 tablespoons unsalted butter (softened to room temperature)

Instructions

  • Preheat oven to 400℉. Line a large baking pan with parchment paper.
  • Place bacon in a single layer on prepared pan and cook for 15-20 minutes, or until bacon reaches your desired crispness. Remove from the oven and set aside.
  • Place slices of bread on a flat surface. Drizzle each slice with honey, and top two slices of bread with bacon, apples, and shredded cheeses. Place one piece of bread on top of the other piece of bread with apples to form a sandwich. Repeat with the other slice to form a second sandwich. Spread softened butter on the tops of each sandwich.
  • Heat a large skillet over medium heat and then add both sandwiches, buttered side down, to the skillet. Butter the tops of each sandwich. Cook for about 3-5 minutes per side, or until cheese is melty and sandwiches turn golden brown. Serve immediately.

Notes

  • Store leftover sandwiches in the refrigerator for up to two days.  When ready to eat, reheat in the microwave or in a skillet over medium heat until warmed through.
