Air Fryer Zucchini is light, crispy, and ready in 20 minutes. With Parmesan cheese, breadcrumbs, and seasonings, this makes a delicious appetizer or snack!
3tablespoonsbreadcrumbs(I used Italian breadcrumbs)
1½tablespoonsall-purpose flour
½teaspoongarlic powder
½teaspoonsalt
¼teaspoonblack pepper
⅛teaspoonred pepper flakes
1tablespoonolive oil
2-3zucchini (sliced into ½ inch rounds and then cut each piece in half to make half circles)

Preheat air fryer to 400°F (if your model has this option).
in a medium bowl, add grated Parmesan cheese, breadcrumbs, flour, garlic powder, salt, pepper, and red pepper flakes. Set aside.
Toss sliced zucchini in olive oil and then add to bowl with seasonings and toss to coat, ensuring each piece is coated evenly.
Line the air fryer basket with parchment paper or spray lightly with cooking spray.
Working in batches, add zucchini slices to the bottom of basket, making sure not to overlap pieces. Cook for 4 minutes, remove basket and flip each slice, and then cook for another 4 minutes, or until crisp and lightly browned. Repeat with rest of slices. Serve immediately.
Notes
Store leftover zucchini in an airtight container in the refrigerator for up to three days.
To reheat leftovers, add zucchini slices to air fryer basket and cook for 5-7 minutes at 400°F.
