Even though my back-to-school days are long behind me, I often feel like I’m a kid again when August rolls around.
Stores start displaying school supplies, new clothes, and the latest lines of backpacks and gym shoes.
And then there are the back-to-school TV shows. You know, where series that are now in re-runs will air their first-day-of-school shows. Like 90210, for example. Any other Beverly Hills fans out there? I’d have to say that is my favorite series of all time (with Dawson’s Creek in a close second). I can still remember Brenda and Brandon’s first day at Beverly Hills High, along with Jen’s first day of school in Capeside…
Did I mention the school supplies? Because I still get giddy over those. I’m a paper and pencil kind of girl, so even now, I love shopping for a new planner, post-it notes, notebooks, and other supplies. I get lured in by the colorful papers and new ways to organize my home office.
And with the hustle and bustle of the new school year comes from frantic parents who are looking to ease their kids back into the daily routine of school, sports, and homework. Even though I don’t have kids, I can empathize with those parents, or any other working adult that’s trying to settle into a routine.
But, one thing that should not be hectic is meal-time. I’m all about easy meals, and I’m pretty sure you are too, right?

Besides being on the healthier side and full of flavor, this Tuna Spinach Wrap is packed with ingredients that make you feel good. Bumble Beeยฎ Solid White Albacore Tuna, baby spinach, juicy tomatoes, bacon, and hummus. Sounds pretty good, right?
I can never resist the combination of spinach and bacon, but throw in some tuna, tomatoes, and hummus, and I’m one happy girl. The fresh taste from the tuna, combined with the crisp bacon and spinach are a winning combination.
And that means kids and adults will both enjoy this Tuna Spinach Wrap. It makes a simple lunch or easy dinner for those busy, back-to-school weeks. These wraps are also ready in about 10 minutes, and you really can’t get much easier than that.
Tuna Spinach Wrap
Ingredients
- 2 spinach tortillas
- 4 tablespoons hummus, divided
- 1 can (12 ounce) Bumble Beeยฎ Solid White Albacore Tuna in Water, drained
- 1 cup fresh baby spinach, divided
- 1 roma tomato, sliced
- 6 slices bacon, cooked and drained
Instructions
- Spread 2 tablespoons hummus onto each tortilla. Add an even amount of tuna onto tortilla.
- Top each tortilla with 1/2 cup baby spinach, tomato slices, and 3 slices of bacon.
- Serve immediately.
Can you believe we are talking about back to school already? At least we have scrumptious sandwiches like this one to ease the way…this looks pretty great for office lunches too!

My school days are loooooong behind me too, Gayle, but I completely know what you mean about getting excited about this time of year. I just would love getting new supplies and clothes for the school year. Like you, I’m a paper and pencil kind of girl. I even prefer a paper planner these days over an electronic one. I’d rather have my appointments and reminders actually wrote down. And don’t even get me started on cute little notepads and journals. Love those!!
