Ingredients:

  • Pork Chops: I used boneless pork chops since they cook quickly. However, bone-in pork chops or thicker chops can also be used, but you will most likely need to adjust the cooking time.
  • Condensed Soup and Chicken Broth: A can of cream of chicken soup, cream of mushroom soup, and chicken broth help make that irresistible cream sauce that envelopes the pork and rice.
  • Seasonings: Garlic powder, onion powder, paprika, salt, and black pepper are the simple spices that you need to give this dish a lot of flavor.
  • Rice: Long-grain white rice is best, as it will cook well in the slow cooker. You can use minute rice, but it will most likely end up cooking too fast and become mushy.

How to Make Pork Chops and Rice in Slow Cooker:

  • Prepare: Line your slow cooker with a liner or coat lightly with cooking spray and then place your pork onto the bottom.
  • Mix: In a medium bowl, whisk soups and seasonings together, then pour over the pork chops.

  • Cover and Cook: Cook on low for 4-5 hours, or on high for 2-3 hours, until the pork is cooked through and tender.

  • Stir the Rice: When about 45 minutes remain, add the rice on top of the pork chops and stir well, making sure it is covered by the liquid. Cover and cook until the rice is cooked through and liquid is absorbed. For even more flavor, add in some shredded cheese just before serving.

How to Store:

Store cooled leftovers in an airtight container in the refrigerator for up to four days.

  • To Freeze: Place pork and rice in a freezer-safe container or bag and freeze for up to three months. When ready to serve, let thaw completely in the refrigerator.
  • To Reheat in the Microwave: Place in the microwave and heat for 1-2 minutes, or until warmed through.
  • To Reheat on the Stove: Add slow cooker pork chop and rice to a large skillet with a splash of chicken broth or water to prevent it from drying out. Cover and warm over medium heat until warmed through.

Variations for Slow Cooker Pork Chops and Rice Recipe:

  • Protein: Swap the pork chops for pork loin or chicken breasts for a different flavor.
  • Rice Swaps: Use brown rice or wild rice for a nuttier flavor. Quinoa or cauliflower rice will also give this crock pot recipe a hearty texture.
  • Add Some Veggies: Sprinkle in some fresh mushrooms, broccoli, green beans, or carrots for a tasty addition.
  • Use Some Cheese: Before serving, stir in some shredded mozzarella cheese, parmesan, or cheddar cheese.
  • Sprinkle in Some Spice: Add a pinch of cayenne, red pepper flakes, or diced jalapenos to give this easy recipe more flavor.

What to Serve:

Since this is a one pot pork chop recipe, I like to keep it simple and serve with some garlic bread, a green salad, or roasted carrots.

Tips for Making the Smothered Pork Chops and Rice:

  • Choose the Right Chops: Boneless chops are great because they cook quickly. However, bone-in chops will lend the most flavor, though you will need to adjust the cooking time.
  • Sear for More Flavor: If you have the time, you can coat the chops with some salt, pepper, and garlic powder, and then sear quickly on each side to lock in more flavor.
  • Add Enough Liquid: Make sure to use the correct amount of liquid, otherwise the rice will not cook evenly.
  • Avoid Overcooking: Cook on low for 4-5 hours or high for 2-3 hours. Slow cooking for too long can make the pork chops dry, even in liquid. Use a meat thermometer to ensure the pork cooks to 145℉.
  • Let It Rest: After cooking, let the pork chops rest for a few minutes before serving to lock in juices.

Slow Cooker Pork Chops and Rice is a comforting, one pot meal that's easy to prepare. With minimal prep time and just a few ingredients, this simple recipe comes together in minutes for a cozy dinner that's perfect for the whole family!

Ingredients

  • 4 boneless pork chops, (about 1-1½ inches thick)
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika, (or regular paprika)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • cups long-grain rice , (NOT minute rice)

Optional:

  • 1 cup shredded mozzarella cheese or Parmesan cheese, (if desired)

Instructions

  • Line your slow cooker with a liner or grease with cooking spray. Place pork chops in an even layer onto bottom of slow cooker.
  • In a medium bowl, add soups, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Whisk well to combine.
  • Pour soup mixture evenly over pork chops. Cover and cook on low for 4-5 hours or on high for 2-3 hours (pork should reach an internal temperature of 145℉). For the rice: when about 45 minutes remains on cooking time, stir in rice and make sure it is covered by liquid. Cover and cook for 45 minutes-1 hour, or until rice is cooked through and liquid is absorbed. Stir well and serve immediately. *If using cheese, add into slow cooker, stir to combine, and cover until cheese is melted. Serve immediately.*

Notes

  • Leftovers will keep in an airtight container in the refrigerator for up to four days.
  • Keep an eye on your slow cooker, as it is easy to dry out the pork, even when it is cooked in liquid.
  • Shredded cheese is optional: I did not use it in the photos of the pork chops, but I have tested this recipe with and without cheese, and both versions are delicious.
