Red Velvet Cake Mix Cookies
If you’ve never made cake mix cookies before, you’re in for a real treat.
I’ve shared these strawberry cake mix cookies and those Halloween cake mix cookies, and I’m adding a new one to the mix…this red velvet cake mix cookie recipe.
Just like the name suggests, the base of these red velvet cookies are red velvet cake mix. It may sound a little strange, but trust me, it’s so tasty.
And I did I mention these cookies are made with just four ingredients? You probably already have everything on-hand, which is perfect for when you want a sweet treat but don’t want to slave away in the kitchen.
This red velvet cake mix cookie recipe results in a super soft and chewy texture, with a crackly top and white chocolate chips. If you love red velvet desserts, then these cookies were made for you.
Red Velvet Cake Mix Cookie Ingredients:
- Red velvet cake mix
- Vegetable oil
- Eggs
- White chocolate chips
How to Make Easy Red Velvet Cookies:
- In a large bowl, add cake mix, oil, and eggs and stir until thoroughly combined. Fold in the white chocolate chips.
- Optional: refrigerate dough for at least 15-20 minutes so that dough is easier to shape into balls and cookies retain their shape and do not spread out.
- Preheat oven to 375°F. Line two large baking pans with parchment paper or lightly coat with cooking spray. Set aside.
- Shape dough into rounded balls (or use a 2 tablespoon cookie scoop for even cookies) and place onto prepared baking pans.
- Bake for 8-10 minutes or until edges are set. Remove from oven and let cool for 10 minutes, then move to wire rack to cool completely.
Do I Have to Refrigerate the Dough Before Baking?
No, if you’re short on time, you don’t have to. However, chilling the dough for at least 15 minutes will help the cookies retain their shape and come out round and thick.
My Dough is Sticky…Is That Ok?
Yes! Because the dough is a base of cake mix, this is normal. Chilling the dough for at least 15 minutes will help it be less sticky.
Can I Make These Cookies Ahead of Time?
Definitely! You can prepare cookies, shape into balls, and freeze for up to two months before baking.
How Long Will Cake Mix Red Velvet Cookies Last?
Cookies will last in an airtight container at room temperature for up to four days. If the cookies start to dry out, stick a slice of bread on top of cookies…this will help them retain their moisture.
Variations of Cake Mix Cookies:
- Experiment with different cake mixes! Yellow, chocolate, or funfetti cake mixes would make a delicious cookie.
- Add sprinkles or different chocolate, nuts, etc. to the cookies for added texture and flavor.
- A touch of vanilla (or almond extract) will enhance the flavor of any cake mix cookie.
- Before baking, roll the dough balls into powdered sugar or granulated sugar to give them an extra special touch.
- Frost cookies once cooled with a cream cheese frosting for even more flavor.
Tips for Making the Best Cake Mix Cookies:
- If you have time, chill the dough for at least 15 minutes before rolling into balls. This will help the cookie retain its round shape and not spread out as much.
- Use a cookie scoop to ensure even-sized cookies.
- Let cookies cool completely before storing. If cookies dry out too fast, place a slice of bread in the container and seal. This will help the cookies remain soft.
