Pumpkin Pie Oatmeal

I’ve been on a roll with the oatmeal recipes lately. And that’s no small feat since I never used to care for oatmeal that much. It was always one of those foods where I would “think” that I liked it, especially after smelling the aroma from a package of instant oats. But once I would pop the oats in the microwave, I was done after about three bites. No joke. And then I would quickly remember that the smell of oatmeal is much more appealing to me than the taste.
But then something happened. Within the past two years or so, I’ve actually come to like oatmeal a lot more. I can whip up overnight oats and or pop baked oatmeal into the oven and devour a serving in no time. I guess it’s really true when they say that your taste buds change over time.
Now, I still can’t eat oatmeal every day, but when I want an easy, hot breakfast without much prep work, I often opt for oatmeal. It’s easy to make and keeps me full all morning long.
So I guess it’s no surprise that I took my love for pumpkin and made this Pumpkin Pie Oatmeal. Packed with hearty oats, creamy pumpkin, and spices, this dish makes the perfect breakfast for those cool, fall mornings. The cozy flavors blend together to taste like your favorite pie, in oatmeal form!
This Pumpkin Pie Oatmeal takes just minutes to whip up. But you knew that was coming, right? I made this dish in the microwave to keep it on the quicker side, but feel free to make it on the stove if you prefer that method.
To start, you’ll combine old-fashioned oats, milk, pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract in a microwavable-safe bowl. Stir everything together and then heat on medium power for about 2-3 minutes, or until oats are thickened to your desired consistency.
Remove from the microwave, stir, and add some chopped pecans, if desired. I like to add an extra splash of milk to my Pumpkin Pie Oatmeal to make it on the creamy side.
One bite and I guarantee you’ll fall in love with this warm and cozy Pumpkin Pie Oatmeal. The hearty oats take on a creamy texture, filled with hints of pumpkin. It’s the perfect dish for when you want a hot breakfast, packed with nutrients to keep you full all morning long. And who can resist that orange color, right? It’s fall in a bowl, friends!

Pumpkin Pie Oatmeal
Ingredients
- 2 cups old-fashioned oats
- 2 cups milk, any kind
- ½ teaspoon vanilla bean paste, or vanilla extract
- ½ cup pumpkin puree
- 2½ tablespoons packed light brown sugar
- 2 teaspoons pumpkin pie spice
- ¼ cup chopped pecan for topping, if desired
Instructions
- Add oats, milk, vanilla extract, pumpkin puree, brown sugar, and pumpkin pie spice to a medium microwavable-safe bowl. Stir to combine.
- Microwave on medium power for 2-3 minutes, or until oats reach your desired consistency. Remove from the microwave and stir.
- Add chopped pecans and/or a splash of milk, if desired. Serve immediately.
I am not the biggest oatmeal fan in the world, but when it has a great flavour like this, then it will definitely get me out of bed in the morning. A great way to use pumpkin, Gayle!
