Quick…what comes to mind when you think of summer food?
Did you think of burgers, hot dogs, salads, corn on the cob and easy desserts?
Those are just a few of the foods that come to my mind and a perfect summer meal would involve any one of those dishes. Easy to make and even better to eat…that’s what summer dinners are all about!
When I was shopping at Walmart last week, I came across the new Land O Lakes® Soft Squeeze™ Spread. It’s a convenient, easy to use squeeze bottle that makes less mess. Making some of your favorite foods, such as corn on the cob or a fluffy stack of pancakes has never been easier. And because Land O Lakes® is a producer of dairy products, I knew this spread is made with simple, quality ingredients.

After grabbing the ingredients that I needed, I headed home to whip up one of my favorite summer sides.
This Parmesan Herb Corn on the Cob is an easy side dish that’s loaded with flavor. A buttery spread of Parmesan, garlic and herbs top fresh corn that’s roasted to perfection. With just a few ingredients, you can have this simple dish ready in no time!
Corn on the cob just screams summer to me, especially when it’s packed with lots of flavor. You just can’t beat the ease of this recipe, and thanks to Land O Lakes® Soft Squeeze™ Spread, it makes topping this corn even easier.
And like most of my recipes, this Parmesan Herb Corn on the Cob is a breeze to whip up. I chose to roast the corn in the oven, but you could easily grill this alongside your favorite meat or pop them in a pot of boiling water.
To roast the corn, you’ll put the cleaned and husked ears onto a baking pan lines with parchment paper or foil. Squeeze some Land O Lakes® Soft Squeeze™ Spread on top of each ear and then spread to coat the entire ear. Sprinkle with salt and pepper and then roast until the corn starts to brown.
While the corn is roasting, it’s time to prepare the parmesan herb spread. In a small bowl, combine the Land O Lakes® Soft Squeeze™ Spread, grated Parmesan cheese, garlic powder, fresh rosemary and thyme. Once the corn is done, spread onto each ear. And that’s it.

Parmesan Herb Corn on the Cob
Ingredients
Corn
- 4 ears corn, husked and cleaned
- 4 tablespoons Land O Lakes® Soft Squeeze™ Spread, or butter of choice
- Salt and pepper, to taste
Topping
- 4 tablespoon Land O Lakes® Soft Squeeze™ Spread, or butter of choice
- ¼ cup grated Parmesan cheese
- 4 teaspoons fresh rosemary, chopped
- 4 teaspoons fresh thyme, chopped
- ¾ teaspoon garlic powder
- Parsley for garnish, if desired
Instructions
- Preheat oven to 400°F. Line a large baking pan with parchment paper or foil.
- Place ears on prepared pan and spread 1 tablespoon of Land O Lakes® Soft Squeeze™ Spread onto each ear. Sprinkle with salt and pepper.
- Bake for 30-35 minutes, or just until corn starts to brown, turning occasionally so corn does not burn. Remove from oven.
- While corn is roasting, in a small bowl, combine grated Parmesan, rosemary, thyme, and garlic powder.
- Once corn is roasted, spread each ear with Land O Lakes® Soft Squeeze™ Spread and then sprinkle Parmesan herb mixture over each ear. Top with fresh parsley, if desired.
Corn is one of my top favorite things in the summer — I can never get enough! This is such a delicious way to enjoy it with the parmesan and herbs, and I love the squeezable butter! That would be so convenient to serve when entertaining!
