It just screams comfort food and is ready in less than 45 minutes. Similar to this cube steak recipe, this cut of beef is made tender in the instant pot and is smothered with an easy, flavorful gravy. It’s an easy recipe that’s delicious when served with egg noodles or mashed potatoes.

What is another name for round steak?
Round steak refers to the top or inside of the steak, also called the rump. It’s also known as beef round, short cut, London broil, or top round steak. It’s typically a lean cut and because there is less fat than other cuts of steak, it often is tough or dry when cooked without moisture.
Ingredients in Pressure Cooker Round Steak:
- Olive oil
- Beef round steak
- Seasonings: salt, pepper, garlic powder, paprika
- Onion soup mix
- Beef broth
- Cream of mushroom soup: use the canned, condensed version, and for extra flavor, use the cream of mushroom with garlic.
How to Make Round Steak in the Instant Pot:
- Sauté setting: set your Instant Pot to the ‘sauté’ setting and some olive oil to the bottom of the pot. Sprinkle beef with seasonings and sear quickly to lock in the flavor.
- Add: sprinkle gravy over the top of the steak and then add the beef broth and cream of mushroom soup. Stir to combine.
- Cook: cover, set the lid in the ‘lock’ position and cook on high pressure for 20 minutes. Then, do a natural release, followed by a quick release (to remove any extra steam), remove the meat and gravy, and serve immediately.
What Temperature Should the Steak be Cooked To?
To get an accurate temperature, use a meat thermometer. Rare should generally be cooked to: 125-130℉; Medium rare should be cooked to: 130F-135℉; Medium should be cooked to: 140-145℉; Medium well should be cooked to: 150-155℉; Well should be cooked to: 160-165℉.
How to Store:
Store cooled leftovers in an airtight container in the refrigerator for up to three days.
To freeze: store round steak with gravy in a freezer-safe container or bag and freeze for up to three months. When ready eat, let thaw completely in the refrigerator before serving.
Is Round Steak the Same as Cube Steak?
Cube steak is usually round steak that has been tenderized by pound and rolling.

- Use more seasonings: a touch of thyme or rosemary would be a delicious addition.
- Cook in batches: if needed, cook the steak in batches so that it’s easy to sear and isn’t overcrowded in the pot.

Instant Pot Round Steak with Gravy
Ingredients
- 1 tablespoon olive oil
- 1-1.5 pounds beef round steak
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 (0.87 ounce) package onion gravy mix
- 1½ cups beef broth
- 2 (10.5 ounce) cans cream of mushroom soup, (use the cream of mushroom with garlic version for even more flavor)
Instructions
- Set Instant Pot to 'sauté' setting. Once pot is hot, add olive oil. If needed, cut steak into pieces to fit into the bottom of the pot and then season beef with salt, pepper, garlic powder, and paprika. Add to Instant Pot and sear for 1-2 minutes on each side. Press the 'cancel' button once beef is browned. (See note below)
- Sprinkle onion gravy mix evenly over steaks and then add beef broth and cream of mushrooms soups. Stir gently to combine.
- Cover, place the lid into the lock position and make sure the valve is in the 'sealing' position. Press the 'manual' button and set the timer for 20 minutes on high pressure. **Remember that it will take the IP about 10-15 minutes to come to pressure and then will count down from 20 minutes**
- When the timer goes off, let the pot do a natural release for 15 minutes. Then, do a quick release by turning the valve to the venting position and letting steam release until the pin drops. (I like to place a folded kitchen towel over the valve so that it catches the steam)
- Remove steaks and serve with gravy over mashed potatoes, noodles, or rice, if desired.
Notes
- Leftovers will keep in an airtight container in the refrigerator for up to three days.
- While you don’t have to season and sear the round steak before cooking as listed in step #1, I find it gives this cut of beef more flavor, as without, it is more bland.

Hi Gayle! Thanks for sharing your recipe! I have a couple comments. One is about the paprika ingredient. There are many kinds to discover on the food market shelf. What kind do you suggest using? My 2nd comment is about the doneness of the steak. What level of doneness should I expect after 20 minutes on high pressure.

Hi Robin! I used regular paprika, as listed in the ingredients. You can certainly used smoked paprika or another version if you wish. As for the doneness, that depends on what you like. If you look in the post, I list the temperatures for steak and the doneness (medium, rare, etc). After cooking for 20 minutes and then doing a natural release, the round steak has very little, if no pink inside. Hope you enjoy!
