Spring has sprung and I’m loving the warmer weather! Has it started to warm up where you live? Or maybe you live in a nice climate year-round? If so, can I move in with you?

I love three seasons here in Chicago, but really despise winter. So when the sun is shining longer and the temps are rising, I’m one happy girl. I just get that spring-is-in-the-air, fresh feeling. Know what I mean?

The flowers are blooming, trees are budding, and the smell of freshly cut grass is lingering. Oh, spring, how I love thee! Since it’s the gateway to summer, I’m on board!

And because of the nicer weather, I’m just itching to be outside, enjoying the sun on my patio. I look forward to dinners outside, relaxing with a book, and taking in the sights. Are you the same way, too?

Once spring and summer hits, I try to limit my time in the kitchen. I like to make easier meals, grill more (well, that would be the hubster), and meal prep, when I can. Less time in the kitchen and more time enjoying the season is the name of my game, friends!

Since I’m all about those simple meals around here, I decided to whip up a quick meal that’s loaded with flavor and perfect to enjoy during spring (and every other season, too).

How to Make Honey BBQ Pork Tacos

This is such an easy, no-fuss recipe that can be made in the Crock-Pot Express Crock with minimal prep time. Just throw everything together, set it, and forget it. Within no time, you’ll have the most delicious barbecue tacos, without slaving away in the kitchen.

And that means more time spent outside or doing the things you enjoy. It’s a win-win all around, friends!

Here’s how the bbq tacos are made:

  1. In a small bowl, stir together the bbq sauce, honey and light brown sugar. Set aside.

  2. Season both sides of pork roast with salt and pepper and then place in the Instant Pot.

  3. Pour water around the sides of roast and then pour barbecue mixture over top.

  4. Cover, lock and select the meat/stew setting. Set the timer for 1 hour. It will take about 10 minutes to come to pressure.

  5. When the timer goes off, let pressure release naturally for 10 minutes, and then turn valve to steam position to do a quick release for remaining pressure.

  6. Remove roast and shred using two forks.

  7. To assemble the bbq pulled pork tacos, add the pork to a taco shell and sprinkle on toppings. Spoon additional honey barbecue sauce over tacos, if desired.

Can I Make This Recipe in a Slow Cooker?

I’ve only made this recipe in the Instant Pot, but I imagine you can make this recipe in a regular slow cooker too. You’d likely need to cook the pork on low for about 8 hours.

Can I Prepare This Recipe in Advance?

Absolutely! The bbq pork lasts up to five days in the fridge and reheats beautifully.

Tips for Making BBQ Pulled Pork Tacos

  • Boneless pork shoulder works perfectly for this recipe. Boston butt or spare ribs work well, too.
  • Be sure to use a good quality bbq sauce. Your favorite kind is best, as the barbecue flavor will really stand out.
  • Don’t forget the honey and brown sugar! It gives these shredded pork tacos a hint of sweetness.
  • Top the tacos with whatever fixings you like. The possibilities are endless!
  • Don’t forget to save the leftovers. The slow cooker honey bbq pulled pork makes the most delicious lunch or meal for later in the week.
