Herb Roasted Potatoes
These Herb Roasted Potatoes are seasoned with Parmesan cheese, a variety of spices, and baked to perfection. Crispy on the outside and tender on the inside, this easy side dish comes together in minutes and is sure to be the hit of the dinner table!
Have you ever thought about classifying yourself based on the foods that you eat?
You know, like a pizza fanatic, meat-and-potatoes kind of guy (that would be the hubster), or a coffee addict?
I realize that most people don’t fall into just one category. If we did, that would be boring, to say the least. So, to sum up my eating and drinking habits, I would probably be a pizza-lover-coffee-addict-soupaholic-comfort-food kind of gal. Broad yes, but pretty accurate.
Pizza? I could eat it every.single.day. Coffee? I drink it every day. Soup? I usually eat it once a week. And comfort food? Well, there’s a whole lot of foods that fall into that category, such as pastas, seafood, pot roasts, chili, grilled cheese, mashed potatoes, and a whole slew of other dishes.
But since the holidays are almost here, I’ve been craving easy-to-prepare comfort foods. We could all use a few more easy dinner ideas, right?
That’s why I love Bumble Bee SuperFresh® seafood. It’s one of my go-to dinners of choice, and for good reason (remember this Tilapia with Roasted Vegetable Pasta or this Roasted Garlic Parmesan Broccoli?). There’s no mess, no fuss; just pure perfection, time after time.
These Herb Roasted Potatoes are seasoned with Parmesan cheese, a variety of spices, and baked to perfection. Crispy on the outside and tender on the inside, this easy side dish comes together in minutes and is sure to be the hit of the dinner table!
If you’ve been hanging around here long enough, you know that easy recipes are the name of my game. Which means these Herb Roasted Potatoes are a breeze to whip up!
To start, you’ll mix together some olive oil, grated Parmesan cheese, garlic, Italian seasoning, oregano, and a few other spices. Then, you’ll add some halved baby potatoes and toss to coat. Spread the potatoes onto a baking sheet and roasted until golden and crispy. Easy, peasy, right?
And while the potatoes are roasting, you can prepare the Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil. Simply insert the fish into the provided parchment paper and then bake according to the package directions.

Herb Roasted Potatoes
Ingredients
- 2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- ⅓ cup grated Parmesan cheese
- 3 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- Dash of paprika
- Salt and pepper, to taste
- 2 teaspoons chopped fresh parsley, for garnish, if desired
Instructions
- Preheat oven to 425F. Line a large baking pan with parchment paper or coat with non-stick cooking spray. Set aside.
- In a large bowl, add olive oil, Parmesan cheese, garlic, Italian seasoning, oregano, thyme, paprika, salt, and pepper. Mix well. Add potatoes to olive oil mixture and toss to coat.
- Spread potatoes evenly onto prepared baking sheet. Bake for 20-25 minutes, or until potatoes are golden and crispy on the outside.
- Sprinkle with parsley and Parmesan cheese, if desired.
Oh Gayle, they are some perfectly cooked potatoes. Look at the crispiness! I love the combinations of herbs too – I would happily snack on them.

Hmmmm…if I had to pick a category I fell into it would definitely be sushi-eggs- popcorn-seasonal veggies. I eat all four of those at least 4 times a week, and some twice a day. Lol. I think I’m a lot like you, Gayle! Comfort food, coffee, the whole lot of it…..especially my coffee 😉 How could I possibly choose one classification? It’s like when someone asks what my favourite food is. How could I choose? There’s too many yummy things and it could vary from day to day. I think I just love food too much to pick one single thing! There herb roasted potatoes look absolutely delicious and so perfect for the upcoming holidays, especially Christmas! Love the parm on there. And tilapia? YES! I have so totally thought about classifying myself by the foods I like… but then the list and classifications get so long that I end up just having too many. Haha.
