Funfetti Cake Batter Bars
Soft, moist, and full of cake batter flavor, these Funfetti Cake Batter Bars are sure to satisfy your sweet tooth in a fun way!

This has been the summer of desserts for me. Most weekends, I hole up in my kitchen and make some kind of a baked good (or three) to be featured on my blog, and also because I just love desserts, ya know? As much as I love cooking, I also love baking, maybe even a smidge more.
During the week, I plan out what I want to make for the weekend, and then I usually split my recipes between Saturdays and Sundays, depending on what I have planned for those days. Sometimes I make everything on Saturdays, sometimes only Sundays, but whatever the case may be, there’s a lot of action going on!
So it seemed only natural that I bring back one of my favorite flavors, funfetti! Are you sick of that yet? Please lie and say no.
Enter these Funfetti Cake Batter Bars. This shouldn’t even be a recipe, it’s just that easy to whip up. And I’m sure you might’ve seen some version of these bars floating around Pinterest space before, but now that I’ve officially tried and tested it, I’ve got to share this with you.
Pure funfetti deliciousness! These bars are soft, moist, and full of cake batter flavor. And with white chocolate chips swirled in the batter, it will take your funfetti experience to a whole new level. These bars contain just a few ingredients and whip up in minutes!
In fact, I’m going to bet that you might even have all of these ingredients in your kitchen.
These Funfetti Cake Batter Bars were so deliciously addicting, that I made the hubster bring these to his work so that his co-workers could devour them. I can’t be trusted around anything involving cake batter. Sad, I know. So please try out these bars and tell me that you love them, too.

Funfetti Cake Batter Bars
Ingredients
- 1 (15.25 ounce) box Funfetti cake mix
- 1 (8 ounce) block cream cheese, softened
- ½ cup unsalted butter, softened
- 1 egg
- 1 cup white chocolate chips
- 2 tablespoons colored sprinkles, if desired
Instructions
- Preheat oven to 350°F. Spray an 8×8 baking pan with non-stick cooking spray and set aside.
- In a large bowl, cream together cream cheese and butter until light and fluffy with a electric hand mixer, about 2-3 minutes. Add in egg and cake mix and beat until combined.
- Fold in white chocolate chips and sprinkles. Pour batter into prepared pan.
- Bake for 28-30 minutes, or until bars turn golden brown. Remove from oven and let cool completely. Cut into bars and serve.

It’s so true Gayle, I’ll be surfing Pinterest to look for a new recipe but unless someone “I know” (well, blogging friends are still friends!) tries it, I’m hesitant. Why? Because I don’t want to try a recipe that’s not going to work out for me if that’s possible. I only want to spend so much time in the kitchen! So I love it when you hole up in your kitchen trying fun recipes like Funfetti bars that you’ll vouch for. Then I feel it’s safe to try =) These bars are too pretty.

There is just something so delicious about funfetti! I rarely make dessert these days because I know that I will eat the entire pan, so that is a great idea to make your husband take them to work! It really is dangerous to have any form of baked goods in the house, I just can’t help myself and I know that i could probably devour all this funfetti cake in a few minutes 🙂

Is anyone ever tired of funfetti?! I sure hope not! And especially not when it involves white chocolate! That combo is a thick blondie sounds incredible. During the summer, I did all my baking on the weekends too. It was fun to be in the kitchen so much!

Oh I keep meaning to ask you too, what plugin is it that you use for the e-mail subscriptions at the top? I love it, but can’t figure out what it is!
The plugin is through a website called hellobar.com. But in order to use it for email subscriptions, your subscription tool needs to be outside of wordpress. So if you use jetpack through wordpress to send out your posts, then it won’t work. When my site was redesigned, I moved all of my subscribers that I had through jetpack into mailchimp (mailchimp.com). It’s really easy to use, free, and I can totally customize how I want my emails to look whenever a new post goes out! So if you use a service like that, then you can customize the bar that I have at the top of my site for yours! Hope this helps some! If you have anymore questions, feel free to let me know! 🙂

Hi Kelsey! I haven’t made it in a 9×13 pan, but I would suggest doubling the recipe. The bars may be a bit thicker, but I think that might work. Good luck!
I don’t understand the nutrition info. A serving is 1g and that is 203 calories? According to google, 1g is equal to 0.03527396195 ounces (oz). That doesn’t sound like much cake for the calories!
