Easy Pumpkin Danish
These Easy Pumpkin Danish are filled with a sweet pumpkin mixture that’s swirled with cinnamon and brown sugar. Made from a puff pastry base and simple ingredients, you can have this easy breakfast or dessert ready in less than 30 minutes!
Now that we’re finally into September, I’m really starting to embrace pumpkin everything.
Oh who am I kidding…when September 1st hit, I was all about pumpkin. Yep, I ordered a pumpkin spice latte from Starbucks the day they came out (and have had one or five since then) and have been testing pumpkin beers from the moment they arrived for the season.
Everywhere I turn, there’s another pumpkin-y treat to try from the grocery store. It seems that a lot of brands are jumping on the pumpkin bandwagon, and for good reason! Pumpkin Cheerios, pumpkin instant oatmeal, pumpkin English muffins, pumpkin popcorn, pumpkin yogurt, pumpkin ice cream…the list goes on and on.
Making my own pumpkin deliciousness really gets me in the mood for fall. And since we’re having a virtual baby shower today, I thought these Easy Pumpkin Danish would be the perfect addition!
These Easy Pumpkin Danish are filled with a sweet pumpkin mixture that’s swirled with cinnamon and brown sugar. Made from a puff pastry base and simple ingredients, you can have this easy breakfast or dessert ready in less than 30 minutes!
I’m a sucker for treats that double as breakfast and dessert. You, too? Danish can start my mornings off right, and end my days on the perfect, sweet note.
Especially these Easy Pumpkin Danish. With just five ingredients and minimal prep time, you can have this fall goodie ready to go in no time. And after making these Caramel Apple Danish last fall, I knew that i had to come up with an equally tasty pumpkin one.
Did I mention how easy these cuties are to make? Because they sure are, friends! After all, we’re using puff pastry dough as the base, which really doesn’t get any easier than that. Simply use a round cookie cutter or biscuit cutter to make the base of the danish.
Then comes the pumpkin! I used some pure pumpkin, brown sugar, and cinnamon for the mixture. That’s it! Just three ingredients is all it takes for the sweet, pumpkin-y center.
One bite and you’ll be hooked on the cozy fall flavors and buttery, flaky crust. These Easy Pumpkin Danish make a simple breakfast, easy snack, or delicious dessert. But however you choose to eat them, I guarantee you’ll be coming back for more!

Easy Pumpkin Danish
Ingredients
- 1 (17.3 ounce) package frozen puff pastry sheets, thawed
- 1 cup pure pumpkin
- ¼ cup plus 2 tablespoons packed light brown sugar
- 1½ teaspoons ground cinnamon
- 1 egg
- 1 tablespoon water
- Coarse sugar for topping, if desired
Instructions
- Preheat oven to 400F. Lightly grease a large baking pan with non-stick cooking spray or line with parchment paper. Set aside.
- Lightly flour a cutting board or other flat surface. Gently unfold both puff pastry sheets onto surface. Use a rolling pan to flatten a bit more, if needed. Using a round cookie cutter or biscuit cutter, cut nine circles from each sheet. Place onto prepared pan.
- Lightly run a butter knife around the edges of each danish to score a circular border to hold filling.
- In a small bowl, add pumpkin, brown sugar, and cinnamon. Stir to combine. Spoon pumpkin mixture evenly onto the center of each danish.
- In a small bowl, add egg and water. Gently whisk to combine. Brush edges of danish with egg wash. Sprinkle coarse sugar on edges of danish, if desired. Bake for 15-18 minutes, or until danishes are golden brown.
- Remove from oven and allow to cool for 5 minutes.
- Serve immediately or store in an airtight container until ready to serve.

I’ve only just recently cracked open one can of pumpkin and used it in cornbread and I have had pumpkin pie from Whole Foods which was SO good! haha This little danishes are such a fun fall treat for brunch and baby showers like this. 🙂 I love how easy they are to make and I’d never be able to stop after just one!
