Easter always seems to sneak up on me, even though I know it’s always coming. Whether it’s early in the year, or late (like this year!), it feels like the unofficial passageway to spring. Although since Easter is nearing the end of April this year, it may just signal the unofficial start of summer!
Ok, wishful thinking, I know.
But, on another note, how is April treating you so far? Are the flowers budding and trees starting to bloom? I’m so happy that the weather is warming up. We can see warm weather and lots of sunshine ahead of us, and that makes me one happy girl.
Do you know what else makes me happy? Oreo bark! Or more specifically, this easter bark!
I’m sure you’ve heard of chocolate bark before. And if you’ve been hanging around here long enough, then you may even remember this White Chocolate Boo Bark. It’s one of the easiest dessert recipes on my site, and for good reason! It’s so simple to make, requires just a few ingredients, and is so easy to customize.
And because Easter is almost here, I thought I would share my latest version: Easter Bunny Bark!
What’s in Easter Bark?
Easter Bark is filled with creamy white chocolate, Oreo cookies, and your favorite candy. Easy to make and ready in no time, this festive treat is perfect for springtime!
And, really, you can’t go wrong with white chocolate, cookies, and candy. Am I right, or am I right? Here’s exactly what I used to make this fun Easter dessert:
- White chocolate
- Oreo cookies
- M&M’s
- Pastel jelly beans
- Easter sprinkles
What Type of White Chocolate Should I Buy?
Use good quality chocolate. A lot of recipes that use chocolate for melting call for almond bark or candiquick. And while this is completely acceptable, I find that it doesn’t taste very good.
I like to use Ghirardelli white chocolate melting wafers whenever I make something that calls for melted chocolate. It’s good quality and tastes delicious, too. If you can’t find these melting wafers in your local grocery store (or Target, Walmart, etc.), a bar or two of white chocolate would work just as well.
How to Make Easter Bark
One bite and you’ll be hooked on the sweet taste of this delicious Easter Oreo bark! Here’s how I made it:
- Line a 13 x 9-inch baking pan with parchment paper.
- In a medium bowl, microwave the white chocolate until fully melted and smooth.
- Pour the melted chocolate onto the parchment paper-lined pan and gently spread with a spatula or offset knife near the edges of pan.
- Gently press Oreo cookies, M&M’s, jelly beans, and/or sprinkles onto white chocolate.
- Place pan in the refrigerator for the chocolate to harden.
- Once ready, lift up the parchment paper and set on counter. Break into large pieces by hand or using a knife.
This fun treat would make a delicious gift, tied up in little cellophane gift bags for Easter baskets or as part of a dessert table for your Easter gathering. But whatever you choose, I guarantee you’ll love the white chocolate and candy decadence!
Can I Use Other Toppings?
Yes! The beauty of this Easter bark is that it’s completely customizable depending on your tastes. I chose to use white chocolate because I love it, but dark chocolate or milk chocolate can be used instead. And if you don’t like Oreo cookies, you can swap those out for chocolate chip ones or leave them out entirely.
And the candy. Oh, the candy! The possibilities! I used pastel colored M&M’s, spring jelly beans, and pastel sprinkles for that Easter flair. But, really, anything goes.
This Easter Oreo bark really is one of the easiest treats to make. It’s so easy, that it shouldn’t even be a recipe. I just eye-balled the ingredients and then added the fun toppings (while munching on some, too).
Tips for Making White Chocolate Bark
- Use a baking pan as the base and then line the pan with parchment paper. This makes lifting the bark onto a flat surface easy, as well as simple clean-up, too.
- To break the bark into pieces, I like to cover the top with a sheet of parchment paper and then lift up from underneath the bottom with one hand, while putting my other hand on top of the top layer of parchment paper and just break into ‘squares.’ This is a relatively easy way to do this, with less mess.
- If you want to cut the bark into neat squares, run a sharp knife under hot water and then cut. Continue to do this for the rest of the bark.
- There really is no right or wrong way to make bark! Sprinkle as much or as little of the toppings as you would like. Drizzle some melted dark chocolate or peanut butter over the top for an extra sweet surprise!

Easter Bunny Bark
Ingredients
- 10 ounces Ghirardelli white chocolate melting wafers, (see notes)
- 8-10 Oreo cookies, , crushed into small pieces
- ½ cup Pastel M&M's
- ½ cup Pastel jellybeans
- Easter sprinkles
Instructions
- Line a 13 x 9-inch baking pan with parchment paper, making sure that extra paper hangs over the sides for easy lifting once chocolate is hardened.
- In a medium bowl, microwave chocolate until fully melted and smooth, stirring every 30 seconds so that chocolate doesn't burn.
- Once chocolate is melted, pour onto pan lined with parchment paper and gently spread with a spatula or offset knife near the edges of pan.
- Gently press Oreo cookies, M&M's, jelly beans, and/or sprinkles onto white chocolate.
- Place pan in the refrigerator for 30-30 minutes for chocolate to harden. Pan can remain on counter, but will take longer to set.
- Once ready, lift parchment paper by overhang and set on counter. Chocolate will lift right out of paper. Break into large pieces by hand or using a knife.
Notes
- White chocolate: You can also use almond bark, candiquick, white chocolate bar, etc.

- Bark will keep in an air tight container for up to one month if left on the counter, or will keep in the refrigerator for several months.
- This bark is easy to adjust depending on your tastes, so feel free to swap out the white chocolate with dark chocolate, add pretzels, different cookies, etc.
