If you’ve been hanging around here long enough, then you know I’m all about those caprese flavors.
From this Caprese Garlic Bread, to that Caprese Pasta Salad and those Caprese bites, I love it all. Nothing screams summer more than a little basil, mozzarella, and fresh tomatoes.
Since I’ve had my fair share of caprese recipes, I decided to throw one more into the mix. I just couldn’t help it!
And if you guessed a caprese quesadilla, then you’re right one track! I love whipping up an easy quesadilla for a quick lunch for dinner, so I gave it a summery spin.

And with school just around the corner, I thought this would be a quick dinner idea. In fact, this caprese quesadilla recipe could also be considered a healthy back-to-school dinner idea, too. And that’s a win-win all around!
So, let’s get down to the good stuff!
How to make Chicken Caprese Quesadillas:
- Preheat a small skillet over medium heat and grease lightly with non-stick cooking spray. Alternatively, you can use butter. Either one will help give the tortillas that golden color.
- On one half of the tortilla, layer 3-4 mozzarella slices, followed by some shredded chicken, sliced tomatoes, and chopped basil. Sprinkle shredded mozzarella cheese over the top.
- Fold the other half over and press down with a spatula until the shell sticks to the cheese. Cover and cook for 3-4 minutes per side, until cheese is melted.
Some tips for making Chicken Caprese Quesadillas:
- Use shredded rotisserie chicken that you can find in the deli section of your grocery store. It’s such a time-saver! I use it in a lot of my recipes and it cuts back on prep time but still has great flavor.
- Fresh mozzarella is best for this recipe. I use the logs of mozzarella that you can find in the cheese section of the grocery store. Some come already sliced and some are unsliced.
- Fresh basil is the best. Take a few leaves, roll lengthwise, and then chop. In seconds, you’ll have basil ready to use.
How to serve Chicken Caprese Quesadillas:
- Garnish with more fresh basil, if desired. It gives the top of the quesadillas a pop of color!
- Drizzle a touch of balsamic glaze over the quesadillas to give these a tangy twist.
- Serve on a platter for your party guests or for a quick and easy meal alongside a salad.

Chicken Caprese Quesadillas
Ingredients
- 2 medium flour tortilla shells
- 6-8 slices fresh mozzarella
- ¾ cup shredded rotisserie chicken
- 1 roma tomato, sliced
- 5-6 fresh basil leaves, chopped
- ½ cup shredded mozzarella cheese
Instructions
- Lightly grease a small skillet with non-stick cooking spray. Alternatively, you can use one tablespoon of butter.
- Heat skillet over medium heat and lace one shell into skillet. Add 3-4 slices of mozzarella, chicken, tomato slices, basil, and shredded cheese. Fold shell over and lightly press down with a spatula to ensure that the top sticks to the cheese.
- Cook for 3-4 minutes on each side, or until golden and cheese is melted.
- Repeat with second tortilla shell.
- Drizzle with balsamic glaze and top with additional basil, if desired. Serve immediately.
