Caramel Apple Cheesecake Bars
These Caramel Apple Cheesecake Bars are filled with an apple pie cheesecake batter and then sprinkled with tender apples, a sweet streusel topping, and a drizzle of caramel. Simple to prepare and even better to eat, this dessert captures the delicious flavors of fall!
How many caramel apple recipes can I share with you this fall?
LOTS, of course! And I hope you don’t mind.
Caramel apple anything is a favorite of mine, but especially when the weather gets cooler. It reminds me of my childhood. Going to the pumpkin patch, picking out some caramel apples (and cider!), and feeling the crisp air against my skin.
Isn’t fall just wonderful?
What’s also wonderful is cheesecake! And you all know that I’m a big cheesecake lover, right? From this {No-Bake} Pumpkin Cheesecake Trifle, to that No-Bake Peanut Butter Cup Cheesecake, and this Strawberry Cheesecake Mousse, I love it all.
But, it occurred to me that I haven’t shared any cheesecake bars with you. Ever. But, it’s a dessert that I often make when I go to parties or get-togethers. So, I decided to put a fall twist on a classic cheesecake.
These Caramel Apple Cheesecake Bars are filled with an apple pie cheesecake batter and then sprinkled with tender apples, a sweet streusel topping, and a drizzle of caramel. Simple to prepare and even better to eat, this dessert captures the delicious flavors of fall!
The best part of these Caramel Apple Cheesecake Bars, besides the decadent taste, is how easy these bars are to prepare. But, you knew that was coming, right? Even though the ingredient list looks long, trust me, it’s simple to prepare!
To sweeten the batter of the cheesecake, I added apple pie spice. It gives it a hint of flavor, without being too overpowering. And instead of a graham cracker crust, I used a combination of brown sugar, flour, and butter.
And then there’s the topping. Swoon. Aren’t caramel apples the best?
I just diced up a few Granny Smith apples, tossed them with a cinnamon sugar mixture, and then sprinkled them on top of the cheesecake batter. And for the streusel, the ingredients get mixed together in one bowl, and then are tossed over the apples. Easy peasy, right?
If you’re looking for that perfect recipe that just screams fall, then these Caramel Apple Cheesecake Bars were made for you!

Caramel Apple Cheesecake Bars
Ingredients
Crust:
- 1 cup all-purpose flour
- ¼ cup light brown sugar
- ½ cup unsalted butter, softened
Apples:
- 2 Granny Smith apples, peeled, cored and diced
- ½ teaspoon ground cinnamon
- ½ teaspoon white sugar
Cheesecake filling:
- 2 (8 ounces) packages cream cheese, softened
- 1 egg
- ½ cup white sugar
- 1 teaspoon vanilla bean paste, or vanilla extract
- 1½ teaspoons apple pie spice
- Dash of nutmeg
Streusel topping:
- ½ cup packed light brown sugar
- ½ cup all-purpose flour
- ¼ cup old-fashioned oats
- ¼ cup unsalted butter, softened
- Caramel sauce, for drizzling
Instructions
- Preheat oven to 350F. Line an 8×8 baking pan with parchment paper or aluminum foil greased with non-stick cooking spray. Set aside.
- In a large bowl, combine flour and brown sugar. Cut in butter with a pastry blender or hands. Combine until it resembles a course mixture. Press into the bottom of prepared pan.
- Bake for 10-12 minutes, or until crust is lightly browned. Set aside.
- While crust is baking, prepare the apples and cheesecake batter. In a small bowl, combine the apples, cinnamon, white sugar, and nutmeg. Set aside.
- In a large bowl, beat the cream cheese until soft and creamy with an electric hand mixer or stand mixer with fitted paddle attachment. Add in egg, sugar, vanilla, and apple pie spice, beating well to thoroughly combine.
- Pour batter onto prepared crust and spread evenly. Sprinkle seasoned apples over top.
- In a small bowl, combine the brown sugar, flour, old-fashioned oats, and butter until crumbly. Sprinkle evenly over cheesecake batter.
- Bake for 40-45 minutes, or until cheesecake filling is set. Remove from oven and let cool for at least one hour.
- Drizzle with caramel sauce and cut into bars.
These are swoon-worthy. Cheesecake AND crumble, two of the best things ever! I’m such a fan! Please send over all the bars. Now, please. 🙂
Cheesecake and a streusel topping are definitely the best! Thanks, Mir!
Well, happy you finally shared a cheesecake bar recipe! Love these types of recipes. If I’m craving something sweet (and I love cheesecake), I don’t have to make a big cake or have a big piece…I can just grab one (or two) of these bars and way to go! Love that you used a different crust with the brown sugar instead of graham crumbs. And that streusel sounds awesome in and of itself! Pinned, of course! Bring on all the caramel and apple recipes, girl! Totally my jam! Yay for Fall!
Thank you, Dawn! I love cheesecake bars for the exact same reason too. It’s easier to eat a bar (or three) than an entire cake!

These look perfect!! Did you bake the apples on top of the cheesecake or pour them onto the bars after they were baked?
Hi Natalie! I’m so sorry, I completely forgot about that part in the instructions! I’ve updated that to include the apples, but you just fold them into the cheesecake batter. Hope you love this if you try it and thanks for stopping by!

The picture looks like the apples are on top of the cheesecake mixture, not mixed in.
I will make this, but will put Apple mixture on top of cheesecake, then topping over that
Hi Betty! You are right, the apples are sprinkled on top, though you could add them into the mixture. I’ve updated that in the recipe directions. Thanks so much for stopping by. Hope you love these if you try this!
