Ingredients in Chocolate Chip Cake Mix Cookie Bars:
- Yellow cake mix: I used one box of cake mix, but any kind can be used.
- Butter: in order to turn cake mix into cookies, you need a fat, such as melted butter or vegetable oil. I prefer using butter, as it gives the bars are richer flavor.
- Eggs: this acts as a binder and helps the gooey cake bars retain their rich flavor.
- Vanilla
- Chocolate chips: I used milk chocolate chips, but any kind will work.
How to Make Yellow Cake Mix Cookie Bars:
- Mix: in a large mixing bowl, add the cake mix, melted butter, eggs, and vanilla. Stir well to combine. Gently fold in chocolate chips.
- Spread: using a spatula, spread the batter evenly into a baking pan. The batter will be thick!
- Bake: place into the oven and bake until golden brown. Allow the bars to cool completely and then slice.
How to Store:
Leftover chewy cookie bars will last in an airtight container at room temperature for up to five days.
To freeze: store in a freezer-safe container or bag for up to three months. When ready to serve, let thaw completely in the refrigerator.
Pro tip: warm a bar in the microwave for 10-15 seconds and then top with a big scoop of vanilla ice cream!
Tips and Variations for Making the Best Boxed Cake Mix Cookie Bars:
- Don’t skip the cooking spray: be sure to use cooking spray or line the pan with parchment paper for easy removal once the bars are ready to serve.
- For thicker bars: bake the batter in an 8×8 baking pan. The bars will bake up thick and chewy, though you will need to adjust the baking time.
- Swap out the cake mix: for chocolate cake mix, strawberry cake mix, or white cake mix….the possibilities are endless!
- Mix-ins: use dark chocolate chips, white chocolate chips, peanut butter chips, chopped nuts, or toffee bits for a fun flavor.
- Toppings: just before baking, sprinkle extra chocolate chips on top; add some sprinkles; or swirl in some Nutella or peanut butter.
