I can safely say that I am an official almond butter lover, but it took me a while to get there. Within the past few years, almond butter seemed to come out of nowhere and took the world by storm. I’m not one to jump onto the latest food trains, so I politely pushed away the thought of betraying my beloved peanut butter.
But, about a year ago, curiosity got the best of me, and I broke down and bought my first jar of almond butter. As I eagerly popped open the jar, I think I did a double take with all of that oil sitting on top of the butter. Ummm peanut butter isn’t like that…
Then, I took my first spoonful, and was very disappointed. I love almonds. Love them! But in place of peanuts? And people think it’s better than peanut butter? No thanks. I wasn’t sold.
But, once I realized to appreciate almond butter for the taste and spread that it is, I grew to love it. I just needed to realize that it’s not peanut butter, and shouldn’t taste like it. And once I accepted that, almond butter and I became best friends.
True story, friends. I really can’t get enough of it. I love to add it to my smoothie bowls, spread it onto some toast, or just eat it by the spoonful.
Since it’s back-to-school time for the kiddos, I thought I would share my newest (and healthier) snack with you that features almond butter. Kids will love munching on these bites, and adults will love grabbing a few for breakfast or a mid-morning snack.

If you’ve been hanging around here long enough, then you know I’m all about easy and no-bake recipes. And these energy bites definitely fit the bill. With no oven required and only 5 minutes of prep time, you can have these Blueberry Almond Butter Energy Bites ready to snack on in no time.
And while you don’t need to bake these babies, it is better to refrigerate the mixture before shaping into balls, just so that it holds together better.
The hearty oats, creamy almond butter, and chunks of almonds and dried blueberries create a delicious texture that’s light and on the healthy side. And to make the almond flavor stand out even more, I used almond extract. If you’ve never baked with it before, it’s time to start. Not only is the flavor incredible, but the aroma is, too.
So, if you need a new breakfast or snack, or want to send your kids to school with a treat that’s healthier, these Blueberry Almond Butter Energy Bites are the perfect, good-for-you food!

Blueberry Almond Butter Energy Bites
Ingredients
- 1½ cups old-fashioned oats
- ¼ cups roughly chopped almonds
- ½ cup dried blueberries
- 1 tablespoon chia seeds
- ½ cup almond butter
- ⅓ cup honey
- 1 teaspoon almond extract
Instructions
- In a large bowl, combine the oats, almonds, blueberries, and chia seeds. Set aside.
- In a small, microwaveable bowl, add the almond butter and honey. Microwave for 15-20 seconds, or until almond butter melts slightly, so that it is easier to stir. Remove from microwave and add in almond extract. Stir thoroughly until mixture is smooth.
- Pour almond butter mixture over oat mixture and stir to combine, ensuring all of the oats are covered. If the mixture seems too dry, add 1/2 tablespoon (or more) of honey, until it comes together.
- Place bowl into refrigerator and chill for 20-25 minutes, so that mixture holds together and is easier to shape into balls. Form mixture into small balls. Serve immediately or refrigerate until ready to serve.
I have a very similar story. Almond butter is its own animal, and its milder flavor bakes up so beautifully into so many things. I’m a huge fan!

This is perfect timing! My oldest son has a kid in his class with a peanut allergy so I can’t send peanut snacks to school for lunch or snack break. I was planning to make some almond butter bites last night, but I never got around to finding a good recipe. This is exactly what I need! I am not sold on almond butter as a sub for peanut butter either. But in recipes like this, for SURE! What I’m really a sucker for is dried blueberries. I just love them, they’re like the most fantastic chewy little candy 🙂

I wasn’t the biggest fan of almond butter at first either, Gayle! I totally felt like I was cheating on peanut butter and it left me feeling icky inside. 😉 But once I got over it and gave it a few tries, I decided I loved it. So we totally have that in common!
