This easy air fryer quesadilla recipe is loaded with melty cheese and shredded chicken.

Air fried quesadillas are super crispy, cheesy, and loaded with flavor. I like to use rotisserie chicken for convenience (or leftover chicken, if I have some on-hand). Either way, you can’t go wrong!

If you need a quick meal for the family, a simple appetizer, or just a tasty snack, these chicken quesadillas will hit the spot. With just three simple ingredients, you can have this ready in no time.

The best part is that this quick dinner is easy to prepare, makes delicious leftovers, and is a great meal for both the kids and adults. Leftover quesadillas are one of my favorite recipes to have because it reheats wonderfully and is so easy to add more flavor, if needed.

Ingredients in Air Fryer Chicken Quesadillas: 

  • Flour tortillas: In my experience, flour tortillas work better than corn tortillas for making quesadillas.
  • Cooked chicken: I prefer making these quesadillas with shredded rotisserie chicken (or leftover chicken from whatever dinner I prepared the night before).
  • Shredded cheese: Use your favorite. I often reach for sharp cheddar, Monterey jack, or mozzarella cheese.

How to Air Fry Chicken Quesadillas:

  1. Preheat your air fryer to 370°F and lightly spray the bottom of air fryer basket with cooking spray.
  2. Place one tortilla on bottom of air fryer basket, top with half of the cheese, all of the shredded chicken, and then the remaining cheese.
  3. Top with second tortilla and lightly coat with cooking spray.
  4. Air fry for 6 minutes, flipping the quesadilla halfway. Serve with your favorite toppings and/or sauces, such as salsa, guacamole, or sour cream.

How to Store:

Let cool to room temperature and then place in an airtight container in the refrigerator for up to four days.

To freeze, Let quesadillas cool to room temperature and then wrap in aluminum foil and place in a freezer-safe container or bag for up to three months.

What’s the Best Way to Reheat Quesadillas in an Air Fryer?

The reheating process is similar to the initial cooking process. Preheat the air fryer to 350ºF, spray the basket with non-stick cooking spray, and air fry any leftovers for 3 to 5 minutes. Flip halfway to ensure even reheating.

Can You Put a Frozen Quesadilla in the Air Fryer?

Yes! You can reheat these from frozen in the air fryer, so there is no need to defrost. To reheat chicken quesadilla in the air fryer, heat to 370°F and cook for 8-10 minutes, or until warmed through and the cheese is melted.

Topping Ideas

Use your favorite toppings on these chicken quesadillas! I like to add:

Variations:

  • Skip the chicken: Use ground beef, ground pork, black beans, or refried beans instead.
  • Load up on veggies: Add any type of veggie that you like to the filling before air frying! Mushrooms, tomatoes, bell peppers, or onions would be a tasty addition.
  • Make it vegan or vegetarian: Swap in your favorite veggies and non-dairy cheese alternative. Either omit the chicken entirely or use a vegan chicken replacement.

Tips for Air Frying Chicken Quesadillas

  • If you’re worried that your quesadilla will move because of the air power within the air fryer, place a trivet or metal rack on top of quesadilla.
  • I like to line the bottom of the air fryer basket with air fryer parchment paper just in case the cheese bubbles over as it cooks.

  • 2 medium flour tortillas
  • ¾ cup shredded rotisserie chicken, (I like to use the pre-shredded, cooked rotisserie chicken that you can find near the deli section of your grocery store)
  • ¾ cup shredded mozzarella, cheddar, or pepper jack cheese
  • Additional ingredients if desired: chopped tomatoes, bell peppers, onion

Instructions
 

  • Preheat air fryer to 370°F. Lightly spray the bottom of air fryer basket with cooking spray or use air fryer parchment paper on the bottom (for easy clean-up just incase the cheese bubbles over.
  • Place on tortilla on bottom of air fryer basket. Top with half of shredded cheese, all of the shredded chicken, and then the remaining cheese in an even layer. If using additional ingredients, add to tortilla.
  • Top with second tortilla and lightly coat with cooking spray. TIP: If you are worried that your quesadilla will move because of the air power, you can place a trivet or metal rack on top of quesadilla.
  • Set timer for 6 minutes and cook, flipping the quesadilla halfway. Serve with your favorite toppings and/or sauces, such as salsa, guacamole, or sour cream.
