Air Fryer Breakfast Taquitos are filled with scrambled eggs, breakfast sausage, and shredded cheese. Crunchy and loaded with flavor, these crispy breakfast taquitos are perfect for busy mornings!
Air Fryer Taquitos
It’s no secret that I love using my air fryer. From zucchini, to this air fryer French bread pizza, chicken strips, and cheesy cauliflower, this appliance is so versatile.
I also love breakfast foods (have you tried my fluffy Belgian waffles yet?), it was time to add a new recipe to the list. I channeled my love for Mexican food with this simple dish. This air fryer recipe is easy, loaded with hearty ingredients, and perfect for the whole family.
Flour tortillas are filled with an egg mixture of sausage and a sprinkle of cheese, then rolled and baked until golden. The results? A crispy, crunchy outside and soft and flavorful inside. Similar to breakfast tacos, but air fried for that crispy texture.
By using an air fryer instead of an oven, it uses the hot air to circulate and cook the food, which gives it the ultimate taste and texture.
Not only are these breakfast taquitos incredibly easy to make, but you can use your favorite toppings to garnish (or fill the inside) of them. Bell peppers, pico de gallo, avocado or your favorite salsa would be a delicious addition. These would also make a quick snack or easy appetizer for a party or get-together.
Ingredients in Air Fryer Breakfast Taquitos:
- Ground breakfast sausage
- Eggs
- Milk
- Seasonings: garlic powder, salt and pepper
- Shredded cheese: Pepper jack or a Mexican cheese blend works well
- 10 tortillas: I used flour tortillas because they’re easy to roll, but corn would also work
- Toppings: Salsa, sour cream, avocado, etc.
How to Make Air Fryer Flautas:
- Preheat air fryer to 380℉ (if your model has this option).
- In a large skillet, add ground sausage and cook over medium heat and crumble until no longer pink and cooked through. Drain grease, if needed, and then return sausage to pan. Set aside.
- While sausage is cooking, in a large bowl, whisk eggs, milk, garlic powder, salt, and pepper. In another skillet, add whisked eggs and scramble over low heat until fluffy. Add eggs to skillet with sausage and stir to combine.
- Place tortillas on a flat surface and divide egg mixture evenly between each tortilla, then sprinkle each one with shredded cheese. Roll each tortilla tightly and secure with a toothpick.
- Spray air fryer basket with cooking spray or line with parchment paper for easy clean up. Working in batches, place each rolled tortilla in a single layer, seam side down, onto basket. Cook for 4-5 minutes, or until golden brown. Repeat with remaining tortillas.
How Long Do You Cook Taquitos in the Air Fryer?
The taquitos will cook in the air fryer at 380℉ for about 4-5 minutes, or until crispy and golden brown. It is important to place taquitos in a single layer in the air fryer, so you may need cook in batches.
How Long Will These Homemade Taquitos Last?
These will last in an airtight container in the refrigerator for up to three days.
Can You Freeze These?
Yes! Wrap cooled taquitos in plastic wrap or aluminum foil and then place in a freezer-safe container or bag. Freeze taquitos for up to three months.
How Long to Cook Frozen Breakfast Taquitos?
Let thaw completely in the refrigerator. For best results, warm in the air fryer at 360℉ for 6-7 minutes. Alternatively, you can microwave until warm and the cheese is melty.

Alternative Ideas:
- For a healthier option: use part or all egg whites and/or use all-natural chicken sausage.
- Make a combination of chicken taquitos or beef taquitos: brown and crumble ground chicken or ground beef instead of breakfast sausage.
- Swap the flour tortillas: use corn tortillas or whole wheat tortillas, or even wonton wrappers.
- Additions: Add some chopped tomatoes, chopped bell peppers, or onions to the egg mixture.
- Switch up the seasonings: Add some Italian seasoning; smoked paprika; or dried rosemary.
- Instead of ground sausage: Use sausage links or even chopped sausage patties.

- Salt and pepper, to taste
- ¾ cup shredded Pepperjack cheese or Mexican cheese blend
- 10 flour tortillas, slightly warmed for better rolling
- Toppings: salsa, sour cream, pico de gallo
