Fried Egg and Avocado Toast
This Fried Egg and Avocado Toast is a deliciously simple way to jazz up your breakfast or snack. Hearty bread is toasted and then topped with mashed avocado, a fried egg, and cherry tomatoes. It’s ready in just minutes and is full of healthy ingredients!
Before I started blogging full-time, I worked in higher education. I held a position in the academics office for an online university (sadly, I did not get to work from home) and I was there for quite a while and moved up to different spots within my department.
One of my favorite things about going to work every day was my lunch break! Three of my closest co-workers and I would eat in the cafeteria and talk about anything and everything under the sun. Occasionally, a friend of ours from another department would join us for lunch. And every day, he brought an avocado. He would slice it and then just scoop it out with his fork and devour it.
At first, I thought that was kind of strange, as I’d never seen anyone do that, at least in public. I mean, I’ve only done that in the privacy of my own home, as I’m practically addicted to avocados.
But as time went on, my idea of it being strange slowly turned to admiration. Eating an avocado for lunch, a whole avocado, with nothing else on top or mixed in sounded so good.
And while I don’t miss my old job one bit, I do miss the lunches with my former co-workers and my friend with the avocado. Since I was craving avocados the other day, this memory just floated to my mind. Which lead me to this avocado toast. You can see the connection, right?

If you’re anything like me (or my former coworker), this avocado toast will quickly become your new favorite. I realize avocado toast isn’t a new thing, as it’s all the rage on Pinterest, but I wanted to create my own version. And if I do say so myself, it’s absolutely delicious!
Let’s talk about that fried egg. And more specifically, that gorgeous yolk! I’m a sucker for breaking the yolk and having it soak up toast or bread. And when it hits the avocado? Pure decadence!
And this recipe really couldn’t get any easier! But you knew that was coming, right? Simply toast two slices of thick bread, top with a fried egg, and add a sprinkling of cherry tomatoes. And that’s it! Told you it was easy!
One bite and you’ll be hooked on the mashup between avocado and egg. From the crisp toast to the fresh avocados, runny yolk, and tomatoes, this Fried Egg and Avocado Toast is sure to be a winning combination in your house!

Fried Egg and Avocado Toast
Ingredients
- 2 slices bread, any kind
- 2 tablespoons unsalted butter
- 2 eggs
- 1 avocado, pitted, scooped, and mashed into a small bowl
- ¼ cup cherry tomatoes, halved
- Salt and pepper, to taste
Instructions
- Place bread into toaster and toast until it reaches your desired level.
- While bread is toasting, add butter into a medium skillet and melt over medium heat.
- Crack eggs into skillet and cook for 3-4 minutes, or until whites are set but yolk is still runny.
- Divide mashed avocado between two pieces of toast and spread in an even layer. Top each slice with a fried egg, followed by tomatoes.
- Season with salt and pepper. Serve immediately.

I admire your co-worker and his whole avocado for lunch too… although I would have been starving about 30 minutes later! One avocado for lunch? That’s it? Obviously I’m a fat kid and I need more than that for lunch. lol. Now this fabulous toast – this is my kind of lunch! You still have the creamy avocado but with more substance. I’ve had avacado on top of an omelet before, so this egg and avacado combo is almost making me drool. And I’m pretty sure I could eat a whole avacado if I let myself. ????

Add a slice of cooked sweet potatoes. Found this idea on anther site. I roast sweet potato slices in the oven (olive oil, salt, pepper) and then cool and freeze . When ready for breakfast, heat sweet potato slice (or slices), toast bread, smash avocado on toast, stop with sweet potato slice and then fried egg. Scrumptious, this has become one of my favorite breakfasts. I keep the sweet potato slices in a slicone bag in the freezer and pop one or two out when needed.
