These slow cooker steak bites are the easiest way to get a hearty steak dinner on the table.

Using a slow cooker for steak may sound a bit strange, but trust me, it’s so darn good. Especially if you need a cozy meal for a busy weeknight.

You can prep this dinner in the morning, get your slow cooker going, and come home at night to a simple meal that will wow your tastebuds.

The crock pot makes the steak tender and juicy, with the most irresistible, garlicky sauce to go along with it. If you’ve never used your slow cooker for steak bites before, this recipe will change your mind.

Ingredients:

  • Steak: sirloin steak is great for this recipe, but a tougher cut or beef stew meat works well since the slow cooker will make the meat tender.
  • Beef broth: or beef stock works well to provide a deep flavor.
  • Seasonings: garlic powder, salt, and black pepper
  • Onion soup mix: this gives the steak bites such a delicious onion flavor without using actual onions.
  • Unsalted butter: this helps give the steak a buttery flavor.

How to Make Slow Cooker Garlic Butter Steak Bites:

  • Add ingredients to your slow cooker: to the bottom of the slow cooker, add the steak bites, beef broth, seasonings and onion soup mix. Stir to combine.
  • Top with butter: add sliced butter on top of meat.
  • Cook: cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.

What Kind of Steak is Best for the Slow Cooker:

I used sirloin steak for this recipe. However, beef stew meat, skirt steak, or round steak is also an inexpensive cut of meat that can be used.

Do I Need to Sear the Steak Before Adding to the Slow Cooker?

Nope! While searing is optional to lock in the flavor, you can skip this step if you’re short on time. It will taste just as delicious without searing!

How Can I Thicken the Sauce?

I like to serve the sauce as is, but you can make a cornstarch slurry to thicken it. Add one tablespoon of cornstarch and 1 tablespoon of cold water in a small bowl and then mix until no lumps remain. Add the slurry to the slow cooker, stir, and continue to cook for 20-30 minutes, or until the sauce is thickened.

How to Store:

Leftover steak bites will keep in an airtight container in the refrigerator for up to four days.

To freeze: place cooled steak in a freezer-safe container or bag in the freezer for up to three months. When ready to serve, let thaw completely in the refrigerator.

Recipe Variations:

  • Add some vegetables: carrots, baby potatoes, sliced onions, or mushrooms can be added to the slow cooker with the steak for a simple, one dish meal.
  • Use a different cut of beef: if you don’t have sirloin steak on-hand, beef stew meat, flank steak or tenderloin works just as well.
  • Try different seasonings: a packet of dry au jus gravy mix or Italian seasonings or fresh rosemary would make a delicious flavor.

What to Serve with Steak Bites:

I love to serve this steak recipe over mashed potatoes, egg noodles, white rice, or with some roasted garlic parmesan carrots, skillet honey cornbread, or green beans.

Tips for Making the Best Slow Cooker Garlic Steak Bites:

  • Want more flavor? Sear the beef in a large skillet with seasonings and olive oil over medium heat until browned on both sides.
  • Be sure to cut the beef into even-sized pieces: this will help ensure that everything cooks evenly.
  • Use unsalted broth and unsalted butter: because there is salt and onion soup mix in this recipe, the extra salt in the broth and butter may make this too salty.
  • Cook on low if you have the time: cooking the steak on low for 6-8 hours will help ensure tender bites. While cooking on high is fine, it may result in a chewier texture.
