But back to this easy chicken dinner. The best part of using an air fryer is that it saves on time, yet doesn’t skimp on flavor. The chicken thighs are juicy and tender. And those roasted potatoes are crispy on the outside, yet soft on the inside. Just how chicken and potatoes should be.

I also find that I use less oil when using an air fryer, which is another bonus. Plus, it’s easy to clean and that’s a win-win for me!

If you have a big enough air fryer (mine is a 5.8 QT size and worked perfectly), you can cook the chicken and potatoes at the same time. If everything doesn’t quite fit (remember, you don’t want the chicken and potatoes to overlap, as it will not cook up crisp), you can cook in batches.

While you can use chicken breasts in place of thighs, I highly recommend using boneless skinless chicken thighs for this recipe. The chicken is juicier and won’t dry out as quickly as chicken breasts can. You can either use skinless or skin-on chicken thighs…both are delicious. That crispy skin gets me every time. After all, who can resist crispy chicken thighs?

Ingredients in Air Fryer Chicken and Roasted Potatoes:

Chicken:

  • Boneless, skinless chicken thighs
  • Olive oil
  • Seasonings:
  • Garlic powder
  • Italian seasoning
  • Dried thyme
  • Onion powder
  • Salt and black pepper

Potatoes: 

  • Baby potatoes
  • Olive oil

How to Cook Chicken and Potatoes in the Air Fryer:


  1. Preheat air fryer to 400°F. Brush each side of chicken lightly with olive oil. Set aside.


  2. In a large bowl, add potatoes and drizzle with olive oil, tossing to combine. Set aside.


  3. In a small bowl, add garlic powder, Italian seasoning, dried thyme, onion powder, salt and pepper. Sprinkle evenly over both sides of chicken and the remaining seasonings over potatoes and stir well to combine.


  4. Place chicken thighs in an even layer in air fryer basket. **If there is not enough room for the potatoes, you may need to cook in batches. If you do have room in the air fryer, add potatoes in the other half of basket.**


  5. Cook for 10 minutes, then remove basket, flip chicken and potatoes, and cook for another 3-5 minutes, or until the internal temperature of the chicken reaches 165°F and potatoes are fork tender.

How to Store:

Store leftover chicken and potatoes in an airtight container at room temperature for up to four days.

Can You Freeze This Recipe?

I don’t recommend freezing this recipe because the potatoes won’t thaw well and will be mushy. However, you can freeze the chicken in a freezer-safe container for up to three months.

What to Serve with Chicken?

I often serve this with a green salad, some garlic bread, or roasted broccoli as an easy side dish.

Can You Cook Two Foods in the Air Fryer?

Absolutely! As long as you have room in the air fryer, as you don’t want to layer foods on top of each other. In. doing this, the air will not circulate well and the food will not cook evenly and/or crisp up.

Alternatively, some air fryers come with a rack or separator that you can use two cook foods separately.

Can You Cook Frozen Chicken in the Air Fryer?

Yes! Frozen chicken will work. You will need to add 3-4 minutes to the total cooking time, depending on the size of the chicken.

Tips for Making Air Fryer Chicken Thighs and Veggies:

  • Be sure not over-crowd the air fryer basket. The chicken and potatoes should cook in an even layer so that the air circulates properly. If needed, you can cook the chicken and potatoes in batches.
  • Remember that cooking times will vary depending on the size of your air fryer. This recipe was tested in my Cosori 5.8 QT air fryer. If you have a smaller air fryer or one that has less watts than mine, the cooking time may be longer.
  • If using skin-on chicken thighs, cook the skin side up for the first half to get that part nice and crisp.
  • Flip the chicken and potatoes halfway through cooking. This will ensure that both sides crisp up evenly for making texture and flavor.
  • The seasonings in this recipe are easy to customize, depending on your preferences. Italian seasoning, dried rosemary, paprika, and/or thyme would make a delicious seasoning blend.
