Tomato, Avocado and Mozzarella Grilled Cheese
Tomato, Avocado and Mozzarella Grilled Cheese is filled with fresh tomato slices, smashed avocado and creamy mozzarella cheese. Grilled until golden on the outside and melty on the inside, this sandwich is perfect to pair with soup for an easy lunch or dinner!
There’s just something about melty cheese that gets me every time.
I mean, just cheese in general is delicious on its own, but when it’s in melty, ooey-gooey form, sign me up!
Today, I’m talking about one of my favorite comfort foods! Yep, you guessed it, grilled cheese sandwiches. It reminds me of when I was little and would have it for lunch after playing outside in the snow.
Nowadays, playing in the snow isn’t on my agenda, but I still like to curl up with a grilled cheese sandwich and a bowl of tomato soup. Mmm mmm good!

And since winter is not going away anytime soon around here, I thought today would be the perfect time to share my latest (and greatest) grilled cheese.

Not only is this Tomato, Avocado and Mozzarella Grilled Cheese simple to make, but it’s also fast and fresh, too. In fact, you may have all of the ingredients in your kitchen right now.
I usually keep avocados on hand because I love to slice it up for a quick snack or add to salads or eggs. I used an entire avocado on this sandwich, but feel free to adjust it based on your tastes. And tomatoes, you can’t go wrong with tomatoes! And you only need two slices for this sandwich, unless you want to make it thicker, your preferences!
And let’s not forget about that mozzarella cheese. I used thin slices of deli mozzarella cheese for that epic melt. You could also use fresh slices of mozzarella cheese, but it takes a lot longer for that cheese to melt because of the thickness.
Season everything with a little salt and pepper, but your bread slices, and pop that sandwich onto a hot skillet. Within minutes, your melty, tasty, avocado-y, cheesy sandwich will be ready to be devoured. How about that for comfort food?

Tomato, Avocado and Mozzarella Grilled Cheese
Ingredients
- 2 slices thick bread, I used Texas toast
- 1 avocado
- Salt and pepper, to taste
- 2 tomato slices
- 3 thin deli-style mozzarella cheese slices
- 2 tablespoons unsalted butter, softened to spread
Instructions
- Place two slices of bread on a plate or flat surface.
- Cut avocado in half and remove pit. Scoop contents into a small bowl and mash with fork.
- Spread avocado evenly onto each bread slice and season with salt and pepper.
- Place two slices of cheese on top of the avocado on one slice of bread, then add tomato slices, followed by the third slice of cheese.
- Put the second bread slice on top of the sandwich and spread 1 tablespoon of softened butter evenly over the top of bread, coating to the edges.
- Heat a small skillet over medium heat and place the sandwich, buttered side down, onto skillet. Butter the slice of bread that is facing up. Cook sandwich over medium heat, 3-4 minutes per side, or until crust is golden and cheese starts to melt.
- Remove from heat and serve immediately.
