Ok, so maybe you might not agree with me (especially if you don’t reaaaaaally love pizza, like the hubster), but for me, I could eat pizza all day, every day.
I know I’ve mentioned that before, but I feel it’s worth talking about since I’m sharing a new kind of pizza today.
So, tell me…do you love pizza as much as I do? Is it a weekly meal in your house? Do you have a favorite pizza place?
If you’ve been to Chicago before, then you know that we’re famous for deep dish pizza (hello, Lou Malnati’s and Giordano’s…two of my favorite places). And while deep dish pizza hold a special place in my heart, I do love thin crust, too.
The hubster and I have a favorite thin crust pizza place that is out-of-this-world good. We’re creatures of habit and always order a sausage and mushroom pizza. But, I’m pretty much open to any kind of toppings, as I’m not picky when it comes to pizza!
In fact, if I order a pizza just for me (which is very rare), I usually load it with black olives, sausage, mushroom, maybe some garlic, and green olives. Sounds weird, I know, but it’s so good! Green olives definitely give it a different flavor, but since I could also eat olives every day, it’s a special pizza treat for me.
Now that I’ve kinda-sorta gotten off track of what I’m sharing today, allow me to introduce this Arugula and Prosciutto Puff Pastry Pizza. While it’s not the traditional kind, made from regular pizza dough and topped with a marinara sauce, it is delicious none-the-less!

Prosciutto is one of those special meats that I hardly ever have, but when I do, I quickly vow to eat it more often. The salty taste has me coming back for more, and I love using it on salads, as part of an appetizer, or in this case, pizza!
And arugula…I know it’s one of those greens that you probably love or hate, and for me, I sure love it. It’s gives salads a bit of a kick and is a nice change from the plain leaf lettuce. If you’ve had arugula and prosciutto before, then you know what a winning combination it is. But, add it to a golden, flaky puff pastry crust that’s oozing with mozzarella cheese, and then topped with shaved Parmesan? Man, oh man, is that gooood. A match made in puff pastry heaven, if you ask me!

Arugula and Prosciutto Puff Pastry Pizza
Ingredients
- 1 sheet frozen puff pastry, thawed (from a 17.3 ounce package)
- 2 tablespoons olive oil
- ½ cup shredded mozzarella cheese, divided
- ½ cup fresh arugula, divided
- 4 slices prosciutto, chopped
- ¼ cup shaved Parmesan cheese
Instructions
- Preheat oven to 425F. Line a large baking pan with parchment paper or grease with non-stick cooking spray. Set aside.
- Unroll puff pastry dough and use a rolling pin to spread out lightly. Cut the dough in half and fold edges over to create a crust. Place onto prepared baking pan.
- Drizzle each half with 1 tablespoon of olive oil and then lightly prick dough with a fork. Bake for 5-7 minutes.
- Remove pan from oven and top each half with 1/4 cup mozzarella cheese. Continue to bake for 7-10 minutes, or until crust is golden.
- Remove, and if needed, lightly prick air bubble on crust to deflate. Top each half with arugula, prosciutto, and shaved Parmesan cheese.
- Cut into slices and serve immediately.
This looks so fresh for Spring! And it’s basically a salad and pizza all in one shot! Love using puff pastry (or store bought naan) for pizza because it makes them SO quick! I could eat this every night.

Yay to pizza twinning on a Thursday! Pizza is definitely a pretty regular thing in our house.. but not a weekly thing. If that makes sense? I’m a thin n’ crispy crust, puff pastry or naan bread pizza type of chick. While my husband loves pan or deep dish. I didn’t like traditional pizza for most of my life.. but recently I’ve been making homemade pizza once a week and can’t get enough! I loooooove putting olives on my pizza too! Anyway, this prosciutto and arugula topping is definitely something I would love. So clever to use puff pastry as the base!

I love pizza too and with our boys, we probably have it weekly because they love it too! We go out to a restaurant that often has a pizza like this. It’s piled with arugula prosciutto and parm and I love it! The puff pastry “crust” is such a fun spin — this would be a great appetizer too!
